Easy Coconut Cream Pie (S1E4)

(Picture of recipe) Welcome to the Diabetic-Friendly Kitchen! In this episode, we show how to make a super-simple, quick-and-easy coconut cream pie. It's sugar-free!

Ingredients

1-1/4c xylitol (divided)
1/3c water
2c milk
1/2c all-purpose baking mix
1/4c (1/2 stick) butter, softened
4 eggs
1 tsp vanilla extract
1-1/3c flaked coconut

 

The Process

1. Over medium heat, mix the water and 1/3c xylitol, stirring constantly until the xylitol dissolves.

2. Mix the coconut with the water/xylitol, let sit for 5 minutes, then spread out on an unlined cookie sheet.

3. Combine the remaining ingredients in a blender and blend on low speed for three minutes.

4. Pour the mix into a greased pie pan, and sprinkle the wet coconut mixture from step 2 evenly over the batter.

5. Bake at 350 degrees for 40 minutes, or until center has set and top is golden brown.

6. Serve and enjoy! Serve warm or cold, but refrigerate the leftovers.
